Roasted, smashed, baked or boiled, potatoes will always be the top vegetable crop. A stable food found in every table at every corner of the world, potatoes are a very good source of vitamin B6, potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber, and pantothenic acid.
For a  weight gain, potatoes are the solution because of its high starch content. To lose some, they also come in handy. All you have to do is take away the extra fat and deep frying and a baked potato becomes an exceptionally healthful low calorie, high fibre food that offers significant protection against cardiovascular disease and cancer.

Potatoes have blood-pressure lowering potential
According to a study in the UK, scientists at the Institute for Food Research discovered kukoamines, a blood pressure-lowering compounds previously only found in Lycium chinense, an exotic herbal plant in potatoes. 
"Potatoes have been cultivated for thousands of years, and we thought traditional crops were pretty well understood," said IFR food scientist Dr Fred Mellon. "But this surprise finding shows that even the most familiar of foods might conceal a hoard of health-promoting chemicals," he said. Many of the building blocks of protein such as amino acids require vitamin B6 as do the creation of the DNA, nuclei acid. Potatoes are latent with vitamin B6. In fact, just one medium potato is known to contains over one-half of a milligram of vitamin B6. It is hence an established truth that potato scores the highest as a health-promoting food.

Vitamin B6 in potatoes play a role in Nervous System activity
In the earlier point, Vitamin B6 was stated to help build body cells. However, the importance of vitamin B 6 which is found in potatoes have also been known to play numerous roles in the nervous system too, such as that of a brain cell activity. B6 is also necessary for the creation of amines, a type of messaging neurotransmitter that the nervous system relies on to transmit messages from one nerve to the next, melatonin, the hormone to a good night's sleep and even epinephrine and norepinephrine, hormones needed for the normal brain function.

Potatoes are also known to contain methylation which is also important to cardiovascular health and the breakdown of glycogen, the form in which sugar is stored in our muscle cells and liver hence strengthening physical performance and endurance.

They also protect the skin from early aging, reduce inflammation and acts as a booster for a strong immune system and a strong digestion. 

However, avoid greasy French fries or potato chips, potatoes that are typically loaded with fats such as butter, sour cream and melted cheese as they act as a potential contributor to heart problems.

Earlier studies also recommend inclusion of potatoes in children's diet as they are a good source of potassium and provide eight per cent of the recommended daily value of fibre, according to reports.
